A Piece of Cake



  • 50g whipping (double) cream
  • 1 1/2 tablespoon of Boost green tea blend
  • 200g butter
  • 150g caster sugar (I use natural Xylitol about 100g in place of the caster sugar)
  • 4 eggs
  • 180g all purpose flour
  • 1 teaspoon of baking powder.


Preheat the oven to 180c. Butter and line the bottom of a loaf pan and set aside.

Heat the cream in a heatproof bowl over a pot of simmering. Do not boil. Add in tea powder. Stir and set aside to infuse for about 10 minutes.

Beat the butter and sugar (or Xylitol) on a high speed (you could do this by hand and get a workout at the same time) about four or five minutes usually.

Gradually add in the eggs one by one, beat to combine after each addition.

Turn the mixer to low speed (that will happen naturally if you have beaten by hand) and add the tea-infused cream mixing gently until just combined.

Combine the dry ingredients and fold into the batter slowly then beat for 30 seconds.

Pour batter into prepared pans and bake in the oven for 40 minutes at 180c.

Enjoy with a cup of green tea!
